Bourbon Sidra is a hybrid coffee varietal, a cross between Red Bourbon and Typica known for its unique flavor profile that combines sweetness, acidity, and a silky mouthfeel. It's gaining popularity for its complex cup quality and is often compared to Geisha due to its exceptional flavour.
Farm info
Jonathan Delgado is the farmer behind Finca La Meseta located in Bruselas, Huila, Colombia. Jonathan is part of a group of young producers who are extremely focused on developing complexity in the coffee flavours and utilising special fermentation to highlight this. At the age of 30, he is already an experienced processor who, with the confidence of his father (2nd and 3rd generation of coffee growers), has experienced incredible results in cup of excellence competitions and a growing appreciation around the world.
The Process
After harvesting only the top quality ripest cherries they begin the float process to eliminate the less dense cherries and impurities. Afterwards Jonathan begins the fermentation process which is an anaerobic process of 48 hours in grainpro bags. Then, it is subjected to a second anaerobic fermentation process of 72 hours in plastic tanks. Finally, it is put to dry in small roofed patios for almost 40 days.
