Sustainably sourced from the Jalapa region of New Oriente, Del Valle is a regional lot of coffees, collaborated on by local farms and smallholders; showcasing the region’s well defined syrupy body and rich chocolatey characteristics. This beautiful region is distinct from other growing regions of Guatemala; it boasts pine forests scattered across a mountainous landscape, teeming with birds and wildlife. Producers in this region typically sell cherry to wet mills, which carefully conserve water resources in the area.
In the Jalapa region, Primavera buy cherry from coffee farmers rather than parchment. This not only allows them to offer a great price to the producers, but also works alongside producers to hone their harvesting practices, as a targeted way to boost coffee quality.
Guatemala is one of our favourite origins to work with, as there is an immense amount of biodiversity in the region - lots of different cultivar and indigenous varieties, lots of new varieties and experimental farmers. Guatemalan terroir is very distinct and recognisable thanks to its rich volcanic soils and stable year-round conditions, which make it perfect for cultivating coffees.
If you're looking for the perfect coffee to present as a classic x modern espresso - this is the one. The flavour characteristics are very familiar and approachable, pairing excellently with milk, but also great as a standalone black coffee. This coffee is also very well suited for brewing as immersion based filter brews, and as a classic, chocolatey batch filter.
