    Hydro Natural is the latest spectacular release from Felipe Restrepo which is a whole explosion of candy and chocolate flavour. In the cup we are getting a juicy and candy sweet coffee that reminds us of Haribo gummies with a delicious creamy chocolate aftertaste.

    This is of the Caturra variety using Felipe´s ´Hydro Natural´ fermentation method.

    The cherries are floated to discard the less dense ones and remove external elements such as leaves and sticks. Afterwards, a manual selection is made to ensure that the mass is as homogeneous as possible. 

    PROCESS

     The fermentation process starts with a 125-hour anaerobic fermentation in a bioreactor. This is a lactic process with the addition of yeast in recirculation in order to achieve homogeneity in the fermented dough. Drying in mechanical silos for 3 days intermittently.
