Cherry is the latest spectacular release from Felipe Restrepo. This coffee is a beautiful blend of cherry sweetness, vanilla and a nutty aftertaste. Delicious as both espresso and filter.
The cherries are floated to remove lower-density fruit and any external material such as leaves or stems. A second, meticulous hand-selection ensures the lot is as uniform and consistent as possible. After this the fruit is depulped removing the seeds and fermented which creates the yellow colour known as Honey. In fermentation, it is undergoing a 48-hour anaerobic fermentation in sealed plastic tanks. This controlled process enhances clarity, structure, and expressive fruit character in the cup.
