This is an Omni-roasted coffee which means it is roasted to highlight the flavour of the coffee and will work well in all brew methods.

This unique micro-lot comes to us from our import partner The Coffee Quest. It was developed by their R&D team with an aim to elevate Castillo‘s traditional and robust profile, complementing it with a watermelon fruity punch. The coffee is fermented with a natural watermelon concentrate for two days. This fermentation and absorption phase lasts for 2 days until the coffee is drained and dried in mechanical silos for 8 days straight, where it is monitored and rotated constantly to ensure an even drying.

Established in 2022, Los Patios is a dedicated processing and innovation centre in Huila. Working closely with local producers, the facility was created to support quality throughout the coffee supply chain, combining careful post-harvest processing with research that helps showcase the full potential of each coffee. 

Since 2023, the Research & Development team, led by Juliana Serna and Alberto Gutierrez, has focused on developing consistent, repeatable processing methods that enhance cup quality while creating distinctive flavour profiles. Through carefully controlled fermentation techniques and the use of proprietary natural fruit concentrates, their work aims to complement the coffee's inherent characteristics while maintaining consistency from lot to lot.

Co-Fermentation Philosophy

The Coffee Quest's approach balances innovation with respect for the coffee itself. While developing distinctive fruit-forward profiles, equal importance is placed on preserving the physical quality of every bean. A key objective throughout the process is preservation, ensuring that experimental processing techniques enhance flavour expression without compromising the coffee's structural integrity or long-term quality. The result is a coffee with vibrant, expressive character while maintaining the consistency and physical quality expected of premium specialty coffee.
