We are delighted to have Peru back in stock and this time a really great smooth and sweet lot from Saul Oliveira the owner of La Palta farm.
Saul Oliveira cultivates a 2-hectare plot in the village of Nuevo Trujillo, district of San Jose de Lourdes, Cajamarca region in northern Peru. After being harvested, the coffee cherries rest for a day, are then pulped and ferment for another 24 to 36 hours. They are then washed one last time and dry for between 12 and 20 days.
Nuevo Trujillo is one of the larger villages in San Jose de Lourdes and produces some of the best coffees in the area, with a distinctive cup profile, citrusy and buttery.
Saul has a parcela next to his cousin Marcial and they both grow caturra, bourbon and castillo varieties, with caturra making up the majority of the mix.
