    This is an Omni-roasted coffee which means it is roasted to highlight the flavour of the coffee and will work well in all brew methods.

    Cherry Bomb is the work of our friend Felipe Restrepo who we visited in Colombia in 2022. It is a deliciously sweet clean coffee which reminds you of cherry haribo candy. For the summer season it makes a refreshing filter or cold brew that also has a nice juicy acidity. 

    PROCESS
    Manual harvesting of ripe cherries. The cherries are floated to discard the less dense ones and remove external elements such as leaves and sticks. Afterwards, a manual selection is made with women to ensure that the mass is as homogeneous as possible. The coffee is then pulped and the fermentation process begins with an anaerobic fermentation in plastic tanks for 48 hours.

    At this point, as the coffee has a greater absorption capacity, cherry fruit juice is added, extending the fermentation for a further 12 hours. Finally, the coffee is put to dry in mechanical silos for 3 days intermittently.
    EP preparation with 95% above 15 mesh. The coffee has a humidity of 10.8% and a water activity of 0.60.
