    This is an Omni-roasted coffee which means it is roasted to highlight the flavour of the coffee and will work well in all brew methods.

    Here we bring you a new varietal for us at Mistral Coffee! Orange Bourbon is a natural mutation of the Red Bourbon coffee tree. Its fruit turn into an orange color with brown spots when fully ripe. It is a tall variety susceptible to all known diseases as the Red Bourbon. Its cup attributes tend to be more citric and fruity.

    The Bourbons are valued for their complex acidity and wonderful balance in the cup. They often have a sweet, caramel quality with nice, crisp acidity and we are really enjoying the fresh crisp notes we are tasting in the cup with this coffee.

    The farmer responsible for this lot is Edilser Satus from Finca Satus and the coffee they have been producing for the last few years has been getting a lot of attention for the high quality and consistency they are achieving. 

    In this coffee Satus have used an anaerobic fermentation process for 50 hours in cherry to then pulp and remove all the mucilage. They have removed the excess water from the bean as quickly as possible, so there is direct sun contact during the first week, then finish the process for 4 days slowly and stabilise in grainpro bags for 15 days.
